Brown Sugar Butterscotch Bundt Cake.

Tender and moist homemade brown sugar bundt cake smothered in a buttery brown sugar butterscotch glaze. My new favorite cake!

I am so excited to share the cake with you today!! For two reasons:

1. It’s crazy delicious.

2. Because…. we’re celebrating the lovely Ashton from Something Swanky, who is going to be having a baby boy soon! We’re celebrating on the internet today because, well, that’s what we do. We are her invisible internet friends and if we can’t actually be there to celebrate this huge milestone with her – then you know we have to find some way to show her some love. 🙂

Ashton always makes the most amazing desserts – everything from crazy, over-the-top bacon fried chicken donuts or red velvet cheesecake ice cream to old-fashioned desserts that can’t be beat like her easy caramel corn or homemade chocolate cream pie.

I love old-fashioned desserts. The kinds of desserts grandmas make so well – like buttery caramel corn, banana bread, and deep dish apple pie. Or peach cobbler, cornbread, and sweet chocolate fudge. I wanted to shine some light on her incredible “classic’s” recipes and create a cake that’s just that – Simple, yet perfect in every way, because this is my love language.

It’s like a big, sweet hug from grandma’s classic kitchen.

This is the kind of recipe you make on a Sunday afternoon not just because it’s soooo yummy, but because it makes your house smell so delicious and comforting too! It’s the type of recipe that fills your house with the sweet smells of caramelizing brown sugar and wafts of vanilla.

I know this words makes lots of you cringe – but I have to say it: this cake is SO MOIST. It’s probably one of the most tender cakes I have ever made. This cake is a combination of buttery pound cake and tender, moist, homemade vanilla cake. This cake will melt in your mouth.

And the best part? The cascade of butterscotch glaze drizzled overtop. It was an afterthought, but might just be the best decision I’ve ever made.

It is so simple and also the perfect recipe to make during this time of year – it’s perfect for parties or cookouts – no dealing with the frosting messy, slice, top with ice cream, and serve. Or top it will ice cream and strawberries and it’s the new strawberry short cake. But, hey, now that I think about it, I will be making this all year round. Seasons don’t stop this girl.

Brown Sugar Butterscotch Bundt Cake

Tender and moist homemade brown sugar bundt cake smothered in a buttery brown sugar butterscotch glaze. My new favorite cake!

Ingredients:

  • 2 1/4 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cardamom
  • 2 sticks (1 cup) butter, slightly softened
  • 2 cups packed brown sugar
  • 1 teaspoon vanilla
  • 3 eggs, room temperature
  • 1 cup sour cream

Glaze

  • 7 tablespoons butter
  • 1 cup packed lighty brown sugar
  • 1 cup heavy cream
  • Butterscotch chips (optional)

Directions:

  1. Preheat your oven to 325 degrees. Grease and flour a ten inch bundt pan and set it aside. Cream sugar and butter together until whipped, about 5 minutes. Add eggs one at a time, beating after each addition. Beat in vanilla. In a separate bowl, mix dry ingredients together and add to butter mixture, alternating with the sour cream, and mix for an additional minute.
  2. Fill bundt pan with mixture and tap firmly to ensure that you don’t have any air bubbles. Bake until golden brown, about an hour. After it’s done, let it cool in the pan for 15 minutes and then remove from pan and let cool on a wire rack.
  3. While it’s cooling, make your glaze. Mix glaze ingredients together in a sauce pan and bring to a simmer. Whisk steadily until mixture thickens a bit. For me, that took around 15 minutes, and it was still quite thin. Don’t worry, it will thicken more after you remove it from the heat.
  4. Drizzle over cake, sprinkle with butterscotch chips, slice and serve.
