Sheet pan breakfast modifications…

I make mine with crispy home-fries, eggs, melty cheese, and fresh herbs.

But you could add bacon to the sheet pan! Cook it with the potatoes.

You could also use frozen potatoes to make the recipe even easier. Like these. Or these hashbrowns.

Adapt the baking time to how prefer your eggs. The potatoes get cooked until the are done before the eggs get added on. So pull the sheet pan when the eggs are over easy or well done.

These melt in your mouth waffles would make the perfect sweet and savory breakfast.

Ingredients

  • 1 lb red potatoes, quartered
  • 1/2 medium onion, large diced
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 6 eggs
  • 1/2 cup shredded cheddar cheese
  • Parsley, chives, and other fresh herbs, for garnish

Instructions

  • Preheat oven to 400 degrees.
  • On a sheet pan, add potatoes and onions. Mince garlic and add to pan along with the olive oil, paprika, salt, and pepper flakes. Using a spoon or your hands, toss everything together so that potatoes and onions are coated.
  • Bake for 10 minutes, stir, and flip potatoes bake for another 10-15 minutes or until potatoes are tender and almost done cooking.
  • Remove from oven and clear out little circles to crack the eggs into.
  • Crack eggs in each circle.
  • Sprinkle cheese over eggs and potatoes. Return to oven and continue to bake until eggs have set, 7-12 minutes depending on desired firmness of yolk.
  • Remove from oven and sprinkle chives on top.
