Bagel with “The Works”

A warm, fluffy homemade bagel slightly toasted and topped with tomato cream cheese, veggies and basil. These veggie-lover’s bagels are one of the most popular breakfast items at our local farmer’s market!

We have an awesome farmer’s market near our house, and it is definitely the place to be on Saturday mornings around here in the summer! Live music, sunshine, fresh vegetables, local vendors, and most of all: the best breakfast in town! One of the most popular breakfast items are these bagels “with the works” – the line wraps around the corner into the other vendors’ spaces! And being the sucker that I am for anything with veggies, it’s always my breakfast of choice on Saturday mornings.  (The only things that beats the bagels are the donuts, but we all know those aren’t necessarily the healthiest option. 🙂 )

These bagels are oh so delicious and oh so satisfying. Can’t beat getting in some vegetables at breakfast either!

What goes on top:

The topping starts with an awesome cream cheese and pesto shmear on a toasty bagel, followed by a ripe tomato slice, some diced red onion, capers, fresh basil, and micro-greens. Micro-greens are just what they sound like… miniature lettuce. We get them from our local farmer’s market, but if you can’t find any near you, you could use sprouts or mixed greens.

I love these toppings on an asiago bagel, but you can really use whatever bagel you want.

There’s no strange ingredients, nothing fancy, just fresh, wholesome ingredients! It’s crazy how a few basic ingredients can make one of the best breakfasts ever!

Ingredients:

1 bagel, sliced and toasted (plain, everything, or any other flavor)
cream cheese (You could also mix in 1 Tablespoon sun-dried tomato pesto to 8 oz of cream cheese for extra flavor)
2 slices tomato
red onion, chopped
sprouts
capers

Directions:

Spread cream cheese evenly over bagel and layer with remaining ingredients. Enjoy!
