Apple Bacon Gorgonzola Salad with Balsamic Dressing

Today I am sharing my most requested salad. If you like the ingredients below, you will LOVE this salad. Gorgonzola, apple, cherries, pecans and bacon, with a sweet balsamic dressing. Trust me, you will be going back for seconds…maybe thirds – it’s that good!

Well, well, well.. would you look at that – my favorite salad ever is finally making its appearance on the blog. Its also the salad that we never get sick of; which is good because salad + summer = bikini body.

No but really, most nights we either have this salad as a side or I wish I was having this salad for dinner. So filling, packed with flavor and fresh – it just can’t be beat.

The whole thing comes together in less than 20 minutes, starting with the greens – I use a mixture of leafy greens, spinach, and/or arugula… really whatever we have on hand.

Then comes the toppings – toasty pecans, sizzling bacon, vibrant tomatoes, tangy gorganzola cheese, sour granny smith apples and tart dried cherries. There is so much going on in there! The flavor and texture is insane.

Then comes the dressing – my favorite part. I used my go to balsamic dressing. AKA the end all be all of balsamic dressing. Perfectly sweet, perfect vinegar:oil ratio, perfect seasoning, perfectly perfect. I love how it adds another layer of flavor to the salad.

I don’t trust myself around this balsamic dressing. Whoever said 2 Tablespoons was one serving was a liar.

Apple Bacon Gorgonzola Salad with Balsamic Dressing

Gorgonzola, apple, cherries, pecans and bacon, with a sweet balsamic dressing. Trust me, you will be going back for seconds…maybe thirds – it’s that good!

Ingredients:

For the salad:

  • 8 cups spring mix greens
  • 4 slices bacon, cooked until crispy and crumbled
  • 1 medium Granny Smith Apple, diced
  • 1/2 cup dried cherries or cranberries
  • 1/2 cup cheery tomatoes, halved
  • 1/2 cup toasted pecans or almonds
  • 1/4 cup Gorgonzola cheese, crumbled

For the sweet balsamic dressing:

  • 1/2 cup vegetable oil
  • 1/3 cup sugar
  • 3 Tablespoons balsamic vinegar
  • 2 Tablespoons water
  • 1/8 teaspoon dry mustard
  • 1/8 teaspoon ground pepper

Directions:

To make the dressing:

Add all dressing ingredients to a small bowl and whisk ingredients together, until sugar and oil are blended. It may take a couple minutes – just keep whisking. Set aside.

To make the salad:

Toss everything together in a large bowl, except for the dressing, until combined. Pour desired amount of dressing overtop, toss and serve immediately.
