Almond Chocolate Chip Energy Balls

Oh my goodness these are good… and I made these in less than 10 minutes.

I’ve been trying to come up with the perfect no bake recipes for forever and I think I’ve finally done it! For some reason, I’m just not a fan of no bake goods. Never have been, and never will be… well that’s what I used to think.

A lot of no-bake items taste just like those awfully processed bars you can buy from the grocery store. Isn’t the point of making something at home for it to be better than what you could ever purchase at the grocery store? Well friends, these balls aren’t only better, but about 100 times healthier than all the artificial junk that goes into the stuff at the grocery store.

I guess I could be biased because you all know how much of a love I have for grab-and-go breakfasts.

These are the perfect breakfast on the go… grab a couple as you walk out the door and they pretty much cover all the requirements for a nutritious breakfast.

In these balls, there are tart and chewy dates and dried cherries, which are sweeten up by little bits of chocolate throughout the balls. The maple syrup gives them an extra kick of flavor and the pumpkin seeds make them festive. 🙂

I looooove fall… I have come to realize I love a lot of things…. but hey, there could be worse things in life than loving everything, right?

To top it all off these are a one dish kind of deal, or should I say a one blender kind of deal? Haha!

Almond Chocolate Chip Energy Balls

Ingredients:

1 cup sliced almonds
8 dates, pitted
1/4 cup dried cherries
2 tablespoons unsweetened coconut flakes
1 tablespoons hemp seeds
2 teaspoons maple syrup
1/4 cup mini chocolate chips
2 tablespoons pumpkin seeds
1 tablespoons water

Directions:

  1. Add all ingredients except chocolate chips, pumpkin seeds, and water to a blender.
  2. Pulse 15-20 times, until the dates have been broken down and the mixture is coarsely chopped. Scrape sides if necessary.
  3. Add chocolate chips, pumpkin seeds, and water and pulse 3-5 more times, until all ingredients are incorporated.
  4. Shape into balls using a tablespoon scooper.
  5. Store in an air tight container and refrigerate. Keeps up to 2 weeks
