3-ingredient Barbecue Chicken Stuffed Sweet Potatoes

You know what makes a really really good recipe? Do ya?

My answer to that question is one that has very few ingredients, requires minimal effort, and is exploding with flavor. Yeah, I know, recipes that meet ALL of those requirements are hard to come across. But lucky for you (and me), today we are sharing one of those rare recipes.

Very few ingredients: There are only 3! Sweet potatoes, rotisserie chicken, and barbecue sauce.

Minimal effort: You can thank the very few ingredients and the rotisserie chicken for that. I always cheat whenever ever a recipe calls for cooked, shredded chicken because I mean come on, rotisserie chicken is so much easier and tastes so much better. Am I right??

Exploding with flavor: See all that barbecue sauce? It’s probably the most flavorful condiment out there and it totally transforms these sweet potatoes.

These sweet potatoes are like a main dish, side dish, and condiment all in one. We ate these for dinner the other night and for the first time in forever, we didn’t need and sides. Score!

3-ingredient Barbecue Chicken Stuffed Sweet Potatoes

A light and filling sweet potato extra loaded with two simple ingredients. It’s satisfying, both savory and sweet, and unbelievably delicious!

Ingredients:

4 sweet potatoes
1 rotisserie chicken, shredded
Barbecue sauce for topping

Directions:

  1. Preheat oven to 425° and line a large baking sheet with foil
  2. Wash and dry potatoes. Rub potatoes with olive oil and season liberally with salt and pepper. Prick potatoes with a fork and bake for 40-60 minutes, until the potatoes are tender throughout.
  3. Stuff each potato with 3/4 cup to 1 cup of warm shredded chicken. Drizzle with barbecue sauce and serve immediately. Stays good for up to 2 days in the refrigerator.
