5 Ingredient Gluten Free Peanut Butter Chocolate Chip Cookies

You will not miss the flour in these delicious gluten-free cookies.  Everyone needs a treat every once in awhile and this peanut butter chocolate chip cookie did not disappoint.

I tried these during our blizzard we had here last week and let me just tell you they were a hit with the neighbors!  These cookies were the perfect treat to snuggle up to the fire with.  Why is it that we associate snow and blizzards with such yummy food?  All we wanted to do was hunker down and whip up some delicious treats.  There were no salads in the house on those days that is for sure 🙂  I think I read somewhere that when you are snowed in that those calories don’t count?

You don’t even need to attach the stigma of being gluten-free to these cookies – nobody will miss the flour or care.  They are a perfect balance of sweet and salty….two things I love.  Cookies make me so happy…..notice I said “cookies” not cookie because I can never just have one 🙂

5 Ingredient Gluten Free Peanut Butter Chocolate Chip Cookies

You will not miss the flour in these delicious gluten-free cookies.  Everyone needs a treat every once in awhile and this peanut butter chocolate chip cookie did not disappoint.

Ingredients:

1 Cup white sugar (extra sugar for topping)

1 Cup creamy peanut butter (I prefer Jif)

1/2 teaspoon baking soda

1 egg

1 Cup milk chocolate chip cookies

Directions:

Preheat oven to 350 degrees and line your cookie sheet with parchment paper.

Blend all ingredients.

Use a cookie or ice cream scoop and roll dough into a ball.

Roll cookie in extra granulated sugar.

Place cookie balls on the lined cookie sheet. Press the top of each cookie with a fork twice (crosswise).

Bake for 10-12 minutes.  Optional: press extra chocolate chips into the top of the warm cookie.  This will make them look super pretty.

Cool for 5 minutes and enjoy!
