This dish makes eating healthy easy!  I am always looking for dishes that are not just healthy but delicious and full of flavour.  Remember: you do not have to forgo flavour to eat healthy!

In addition to being easy, this dinner is romantic and would be perfect for the coming weekend’s celebration with your Valentine.  Scallops are quick-cooking, sweet, mild, tender and absolutely delectable.  The shredded Brussels sprouts pair perfectly in the lemony-garlicky seasoning.  The addition of smoked apple-wood bacon is just the icing on the cake.  It gives the dish a little something special.  Trust me when I tell you that the friends, partners or whomever you prepare this dish for will feel that you have put a lot of time preparing this secretly easy meal for them.

I have also sometimes prepare this meal on the weeknights because you can pull this together in about 20 minutes – and that is prep and cooking time!  It doesn’t really get much better than that!

I frequently see herb butter used when searing scallops…….pass on the butter and use olive oil here – you will never miss the calories and nobody needs any unnecessary calories!

If you would like another side dish to accompany this meal I would suggest lemony or citrus flavoured orzo.

20-Minute Seared Scallops with Warm Shredded Brussels Sprouts

These succulent and juicy seared scallops are a perfect addition to your favorite healthy dinners!  7 ingredients and 20 minute prep time make this dish a real super star!

Ingredients:

1 lb Sea Scallops
1 lb Shredded Brussels Sprouts
1 Lemon (juiced)
3 Tablespoons of Olive Oil
1/4 Cup Chopped Green Onion
2 Smoked Applewood Bacon Strips, cooked and chopped
3 cloves of chopped garlic

Directions:

  1. Heat two tablespoons of olive oil and cook garlic on high heat.
  2. Once Garlic is browned add Brussels sprouts and green onions
  3. Once the Brussels Sprouts are nicely browned transfer to a plate and set aside.
  4. Add 1 Tablespoon of olive oil and place on high heat and sear the Sea Scallops (about 3-4 minutes on each side) (salt and pepper both sides as you like)
  5. Top the Brussels Sprouts with the Seared Scallops and sprinkle the chopped Applewood Smoked Bacon…..Enjoy
